Healthy Recipes: Pasta with Parsley Walnut Pesto
This easy pasta dish uses parsley pesto for sauce instead of the
traditional basil pesto. And did you know that parsley is chock full of
healthful nutrients like vitamins A, C, and K? Give this easy recipe a
try and see if it doesn't become a favorite in your household.
Ingredients:
16 oz. thin spaghetti
1 bunch flat-leaf parsley, cut from stems
1/4 cup toasted walnuts (pecans or almonds can be substituted)
1/4-1/2 cup extra virgin olive oil
5 cloves of garlic, peeled
Salt to taste
1 or 2 tablespoons of lemon juice

Instructions:
- Prepare pasta according to package directions.
- In a food processor, process parsley, salt, walnuts, lemon juice and garlic.
- With food processor running, drizzle in olive oil until mixture is the consistency that you like.
- Serve over hot pasta.
