Healthy Recipes: Crispy Microwave Potato Chips
Even though potato chips are classified as junk food, this
recipe is one of the healthiest ways to make them. To get your chips crisp in the microwave,
slice your potatoes very thinly. The key
to getting your potatoes sliced very thinly is to use a mandolin. You don’t need an expensive one – a basic
model costs about $40. But be sure and
get one with a guard to protect your fingers.
Typically you would use russet potatoes, but sweet potatoes work
just as well.
Ingredients:
Potatoes
Spray oil
Sea salt
Pepper
Process:
- Slice potatoes very thinly.
- Wash with cold water; drain.
- Dry potato slices on paper toweling.
- Lay out potato slices in one layer on a microwave-safe plate that has been sprayed with oil.
- Spray the top of potatoes with oil as well.
- Cook in small batches on high for about 2 minutes.
- Sprinkle with sea salt and pepper.
